After having my three babies, I have been on a mission to get my body back into shape. Along with regular exercise, healthy eating is also important to help me get to where I want to be.
The one thing I am currently obsessed with and can’t get enough of lately is this simple and easy Chicken and Avocado Salad! I can seriously eat bowls of this all day!
- ½ red onion (sliced)
- 1 chicken breast (cut in small pieces)
- 1 avocado (cut in cubes)
- 1 tablespoon pine nuts
- Mixed salad leaves
- Salad dressing
- Grated cheese
- Olive oil
- In a pan, heat a tablespoon of olive oil and add the chicken breast. Cook until chicken is brown then put it in a large salad bowl.
- Combine the onion, avocado, pine nuts, mixed salad leaves, salt and pepper.
- Add your favourite dressing to the bowl. I love Caesar or Italian! Combine everything together and add a little grated cheese on top.
Side note: I also love to add cherry tomatoes and a little extra drizzle of olive oil too!
