This is my favorite recipe for carrot cake! I have it locked away in my secret recipe book at home!
The carrot cake is moist and tastes great! I first made it for my eldest daughter’s first birthday and it was a hit with all of the party guests!
2 Carrots (Grated)
1 Cup Vegetable Oil
1 Cup Brown Sugar
2 Cups Plain Flour
2 Tablespoon Vanilla Essence
1 Tablespoon Baking Powder
2 Tsp Ground Cinnamon
1 Tsp Ground Nutmeg
1.Preheat oven to 180°C
2. Mix all of the ingredients in a mixing bowl
3. Pour the mixture in a spring-form pan (I like to line mine with tin foil, just so that cleaning up is made a little easier!)
4. Bake for about 45 minutes or until cake is cooked through. (I test this by poking a butter knife in the middle of the cake and if it comes up clean, it’s cooked! Yay!)
5. Leave to cool and top off with yummy home-made cream cheese frosting.
Note: When I was about to make frosting for this carrot cake, my food processor had started smoking when I plugged it in! I quickly got rid of it and I started to go into a panic! So my husband suggested that we make an impromptu layer of lemon sugar glaze and we served it with thickened cream.
